You may already know about these collections:

Jazz Rags and Blues for Two by Martha Mier (There are several books)

"Main St. Shuffle" in Treasures for Two - 6 Captivating Duets for Early Intermediate to Intermediate Pianists

"In Recital with Jazz Rags and Blues" published by FJH and edited by Helen Marlais. There are several different levels. It's primarily a solo book but there is usually a duet at each level.

This is a great piece for 3 students, but it's a rag.
"Three's A Crowd Rag" by Joyce Grill

I love these ideas! especially the duet lessons...if you taught voice too, you could even do accompaniment lessons with a voice and piano student.
